10 minute Peach Cobbler for 2 (can be Gluten Free)

SUPER-EASY! And easy to multiply for larger crowds. This serves 2.

Recipe is originally from the former Italian Market & Grill in Greenville, SC — they used to send out a newsletter. I adapted it for 2 people. I’ll include the 8×8 pan directions at the end.

10 Minute Peach Cobbler for Two

Preheat oven to 350.

Get two 8oz ramekins or small round baking dishes.
Cut a stick of butter in half (4T), then in half again (2T).
Put 2T of butter in each dish and set in the oven while it preheats to completely melt the butter.

In a small bowl, combine
3/4 cup baking mix, Bisquick, or self-rising flour … or gluten-free baking mix (my favorite, actually, for this recipe!)
3/4 cup white sugar
3/4 cup milk

Then slice a peach in half, peel it, and remove the pit.
Slice each half into very thin slices and set aside.

peachWhen butter is melted, pull out the baking dishes. Carefully pour half of the wet mixture into each dish, then top with the peach slices.

Bake at 350 for 25-35 minutes (the center needs to be “baked” and not runny.
Serve warm. Each dish is a generous single portion. Vanilla ice cream is a must. 🙂

Full-size version: Use a 8×8 baking dish and double the recipe; use at least 2 cups of sliced peaches.

Brownies are Beautiful

Make these. You know you want to:

4 squares bittersweet baking chocolate
1 1/2  sticks (10 T) butter –none of that margarine stuff! 
2 cups white sugar
3 eggs
1 T dark Kahlua (vanilla works instead … or regular Kahlua)
1 cup flour
1 cup pecans
1/2 cup chocolate chips
can of dark chocolate frosting

Melt together the chocolate & butter. Pour into mixing bowl.

Beat in the sugar, then eggs & Kahlua (or vanilla). Then flour.  Stir in pecans.

Pour into a well greased & floured 9×9 pan.  Sprinkle choc chips liberally on top

Bake @ 350 for 30 min or till a toothpick comes out with crumbs (still a bit soft in the center).

Let cool & ice.
